VEGAN BAGEL SCHMEAR

My recent visit to Pigeon Bagel inspired this recipe. I love going to restaurants and trying to replicate their dishes at home. Sometimes I am successful, other times not so much, but that’s ok. My daughter is a vegan, and I always like to make things at home (especially with covid) that she can eat and enjoy. She has a great philosophy eat to live, not live to eat. This is a plain schmear, but you can make it anything you want it to be, jalapeno schmear, roasted red pepper schmear, so many possibilities, so little time.

4 Ingredients 4 minutes start to finish four options

Ingredients

  • 15 ounces Extra Firm Tofu (remove moisture)

  • 1 1/2 teaspoons Lemon Juice + 1/2 teaspoon salt (combined)

  • 1 tablespoon Lemon Juice

  • 1-2 tablespoons Nutritional Yeast

  • 1/2 teaspoon fine salt

Instructions

Blend all of the base ingredients in a food processor on high speed until smooth (2-3 minutes in a food processor). Taste; adjust lemon and salt as desired. Pulse or fold in your mix-ins of choice. Enjoy.

OPTIONAL MIX-INS:

  • 1/4 cup chopped jalapenos

  • 1/4 cup fresh dill, chopped

  • 1/2 cup chopped scallion tops

  • 2/3 cup roasted red pepper sun-dried, chopped
