Potato Leek Soup

With the colder temperatures, it’s nice to enjoy a nice bowl of soup. This one is one of my favorites quick and easy and a true crowd-pleaser. I love leeks, almost as much as shallots. Leeks belong to the same family as onions, shallots, scallions, chives, and garlic. Leeks reminds me of a giant green onion that is milder with a creamier texture and sweet flavor when cooked. This soup is not only easy but healthy, good for you, and fills you up. Since it is January and resolutions are high on almost everyone's list. I thought this would be a great addition.

Low Calorie and High Nutrients

Leeks have many health benefits, but the most impressive is their high numbers in nutrients, like magnesium, vitamin A, C, and K. Leeks also contain small amounts of fiber, copper, b6, folate, and iron. It doesn’t hurt that they are low in calories.

Can Protect the Body from Disease

Leeds are rich in antioxidants and sulfur compounds that can protect our bodies from disease.

Prevent Hunger

The fiber and water in leeks can promote fullness and prevent hunger, aiding in weight loss.

Promotes Digestive Health

Leeks are a good source of soluble fiber, which feeds the beneficial bacteria in your gut. In turn, these bacteria reduce inflammation and promote digestive health.

Lower Sugar Levels

Leeks may help lower blood sugar levels, promote brain function, and fight infections. However, more research is needed to confirm these benefits.

The easiest way to make leeks is a soup—-remember I said when cooked, it provides a smooth texture, that means no need for cream.

7 Ingredients, 35 minutes start to finish

3-4 Potatoes (peeled and cubed)

3-4 Leeks (sliced white and tender green parts

1-2 Garlic Cloves

6 cups Vegetable Stock

Salt and Pepper

2-3 sprigs Thyme

Pot all ingredients in a stockpot and bring to a slow boil for 10 minutes, lower temperature, and cook for another 20. Use an emulsifier to blend together (I usually reserve a cup of cooked potatoes to add to the smooth and silk soup). When you serve add fresh thyme or fresh dill and homemade croutons.
