Meatless Meatballs

A few years ago, meatballs were trending, and every restaurant served at least three different types, but rarely were their vegan options. We visited a cute vegan restaurant in Solon, Ohio, and had the best meatballs ever, and they were vegan. This is a simple recipe that is easy and shareable. We gifted a dozen meatless balls to friends and family this holiday season, and they would not have guessed they were vegan. The taste is incredible, and with the help of an air-fryer, these balls have the same texture as meaty-meat meatballs.

Bulgur is a whole-,grain made from cracked wheat. It’s packed with vitamins, minerals, and fiber. Fiber-rich foods like bulgur may reduce chronic disease risk, promote weight loss, and improve digestion and gut health. Quinoa also includes many benefits, such as they are high in proteins with a range of amino acids (vital for supporting muscle development and immune activity.)

8 Ingredients and 20 minutes

! cup Bulgur cooked

1 cup Quinoa cooked

Two cloves of Garlic (minced)

1/2 cup grated onion

Salt and Pepper

1-2 egg replacements (2 tsp flax seeds + 2 tsp water mixed)

Mix all ingredients (should wait until cooked grains cool to touch). Roll into a ball and add to air fryer at 400 degrees for 15 minutes or until the desired crispness.

Serve with San Marzano tomatoes and fresh basil.
