At the beginning of my daughter's quest for vegan enlightenment and was out with friends at a restaurant, her choices were often limited to a salad, no dairy, or french fries. Sometimes she could order sweet potato fries usually deep-fried. Fast forward six years and restaurants have adapted and created many more options for those with dietary restrictions and she has become more health-conscious. Mom to the rescue with make-at-home sweet potato fries [spf]that are good and good for you.

6 Ingredients and 30 minutes max from start to finish
4 medium sweet potatoes [peeled and slice into strips french fry style]
3 TAB olive oil
1/2 tsp Himalayan salt
1/2 tsp freshly ground black pepper
1/4 tsp garlic powder
1/4 tsp paprika
Pre-heat the oven to 400.
Cut the sweet potatoes into sticks your choice of length and width just make sure they are consistent [for even baking]
Toss sticks with oil and spices and toss them with the oil.
Line a jelly roll pan of a rimmed baking sheet with parchment paper [this will aid in crisping]
Seasoned sweet potatoes should be in a single row on the sheet
Bake until brown and crisp on the bottom, about 15 minutes, then flip and cook until the other side is crisp, about 10 minutes. [ The top oven rack produces the crispest of fries ]
Serve hot and with your favorite dipping sauce. If you feel like being adventurous try the maple-mustard-sriracha dipping sauce
5 Ingredients 5 minutes start to finish
Maple-Mustard-Sriracha Dipping Sauce
2 Tab pure maple syrup
2 Tab Dijon mustard
1 tsp apple cider vinegar
1/2 tsp fish sauce
1/4 tsp sriracha, or more to taste
In a small saucepan, whisk all the ingredients together
Heat the pan over medium, frequently stirring, until bubbling and slightly thickened
Remove from the heat and set aside
