Anytime Overnight Chia Seed Pudding
I am obsessed with Chia Seeds, and they are, to me, the healthy version of tapioca. This recipe can be used as a breakfast item, dessert, or snack. You have to think ahead, as this recipe takes up to 12 hours to complete. Chia seeds contain quercetin, an antioxidant that can reduce your risk of developing several health conditions, including heart disease. The seeds are also high in fiber, which helps lower high blood pressure and, in turn, reduce your risk of developing heart disease.
5 Ingredients, 5-minute prep
2 cups light coconut milk or unsweetened almond milk
6 TB chia seeds
1/4 tsp cinnamon
1 tsp maple syrup
⅛ teaspoon sea salt
Topping Inspiration
Fruits [ blueberries, strawberries, peaches, whatever you like]
Chopped nuts
Unsweetened Coconut flakes
Maple syrup
Switch it up with Options: Add 1 tsp ground turmeric, 1/4 tsp cardamom
Instructions
In a mason jar, combine milk, chia seeds, maple syrup, cinnamon, and salt. Cover and shake to combine.
Chill for a few hours, stir and reseal. Continue chilling for 12 hours for the pudding to set.
