Vegan French Toast
Cinnamon and spice and everything nice.
Cinnamon has numerous health benefits, such as supporting gut health and helping manage blood pressure; it is antiviral, antibacterial, anti-fungal, and aids in lowering blood sugar.
Flax seeds are loaded with nutrients and are high in omega-3 fats. Grown since the beginning of civilization, flax seeds are one of the oldest crops. There are two types, brown and golden, which are equally nutritious.
9 ingredients and 10 minutes
1 cup unsweetened vanilla almond milk [or other non-dairy milk]
1/4 cup cornstarch [key to deliciousness]
1 tsp ground flaxseeds
1 tsp vanilla
1/2 tsp baking powder
1 tsp ground cinnamon
2 tsp pure maple syrup
6-8 slices thick-sliced quality vegan bread [12-grain will work, our preference ciabatta]
2-3 Tab vegan butter or coconut oil for frying
Topping Options: maple syrup, grilled bananas, sliced fruit, nuts, raspberry reduction, peanut butter, options are endless
Instructions
Whisk milk, cornstarch, ground flaxseeds, baking powder, cinnamon, maple syrup, and vanilla in a shallow bowl.
Add a little bit of vegan butter or coconut oil to a griddle or pan over medium-high heat and melt.
Whisk the batter again right before dipping bread, as the cornstarch will settle to the bottom of the bowl.
Dip each side of the bread in the batter and let soak for about 10 seconds, then add the bread to the griddle/pan and cook for 2-3 minutes on each side, until golden brown.
