Ten Ingredients

6 cups vegetable broth

2 white onions (chopped)

2 carrots (chopped)

3 green onions (thinly sliced)

1 tsp garlic cloves (diced)

1/4 cup mushrooms (thinly sliced)

Salt and white pepper

Gluten-Free Soy sauce

Olive Oil

Saute onion with olive oil until browned. Add carrot, garlic, and vegetable broth. Bring to boil, and simmer for 30 min. Season with soy sauce, salt, and pepper. Strain the veggies from the broth. Add mushrooms and scallion. Serve and Enjoy!

Bonus: This soup can be frozen.

Options: Add shredded carrots, cubed tofu, Sriracha
