Breakfast Banana Oat Pancakes

You have nothing to lose here— three ingredients are gluten-free, vegan, easy to make, taste good, and are good for you. I like to provide a base or foundation recipe customized to your likes or what you have on hand. This recipe contains oat flour. Now you can buy oat flour or make it. Oat Flour is just oats pulverized into a flour-like texture. Think about that next time Redd charges $6 for a bag of flour ;). I like using oat flour vs. all-purpose because of the taste and nutrients. Oats contain many b1, zinc, protein, fiber, magnesium, and manganese. You may be wondering what manganese is and why I need it — at least, that is what I thought. According to Healthline manganese, It’s required for the normal functioning of your brain, nervous system, and many of your body’s enzyme systems. It helps with bone health, reduces inflammation, blood sugar regulation metabolism, helps with thyroid health, may also aid wound healing. Still, my favorite —>may also reduce PMS (just a theory, but hey, it can’t hurt, right?). Pair that with Bananas, and boost your digestion and heart health with all fiber and antioxidant contents.

3 Ingredients and 20 minutes start to finish

I cup oat flour

2/3 cups almond milk or light coconut milk

1/2 banana (mashed)

Optionals: if you are feeling a little daring

1/2 TAB maple syrup

3/4 tsp baking powder

Instructions

  • Mash your banana in a bowl and add other ingredients in a bowl. Mix until just combined.

  • Heat your griddle or skillet to medium heat. Scoop batter into the hot skillet and cook. PRO TIP: Once you see bubbles on the top, it will be time to flip. FUN FACT: The first one is never pretty, but don’t give up. They will look better.

  • Cook until golden brown

  • Enjoy with fruit maple syrup. Or get crazy and top with maple syrup, almond slices, and blueberries.
