Apple Cinnamon Quinoa Breakfast Delight

I have been looking for something to spice up my breakfast that tastes good, and is good for you. I ran across this breakfast option and thought I would try it myself. This is a variation of a recipe on simply quinoa in 2014. After using Alyssa’s recipe as a base, I customized it. I never thought of making quinoa sweet, as I only make it savory.

Quinoa is the star of this recipe. Quinoa is a complete protein and gluten-free. Studies show that quinoa helps balance blood sugar, lowers the risk of chronic disease, helps with weight loss, and improves gut health.

Cinnamon is a co-star, and it has health benefits as well. Cinnamon contains antioxidants, is anti-inflammatory, and is antidiabetic.

FUN FACT: Cinnamon is the second most popular spice, after black pepper, in US and UK.

ANOTHER FUN FACT: People have used cinnamon since 2000 BC in Ancient Egypt.

Apples, we know the old saying, an apple a day keeps the doctor away, but why? Well, apples are rich in antioxidants and fiber and are heart-healthy.

Maple Syrup is used for its sweetness power. However, it is a source of zinc, copper, iron, magnesium, potassium, and calcium.

Apple Cinnamon Quinoa Breakfast Delight

7 Ingredients and 30 minutes start to finish

  • 1/2 Cup Quinoa

  • 1 1/2 Cup Water

  • 2 Large Apples (peeled and cubed)

  • 2 tsp cinnamon

  • 1 tsp vanilla

  • 2 TAB maple syrup

  • 2 TAB Almond Milk [unsweetened]

Instructions

Add quinoa, water, and apples to a saucepan and bring to boil

Cover and reduce to a simmer for 25 minutes [liquid will evaporate, and apples should be soft]

Stir in cinnamon vanilla. milk, and maple syrup

Serve Immediately and Enjoy the most important meal of the day!

This is a great breakfast option that is protein and fiber-packed so that you will be satisfied and satiety all morning long.
