Waldorf Celery Salad Reboot vegan and gluten-free

Savory, Sweet, Simple: The main star of this show is celery apples and grapes. We take the iconic Waldorf salad, turn it on its head and make it healthy.

So celery, that is so on-trend in our household. Celery is an excellent source of antioxidants, reduces inflammation, supports digestion, is rich in vitamins and minerals with a low glycemic index, and was an alkalizing effect.

Couple that with apples, and the health benefits double. Apples are rich in fiber and antioxidants. The adage, eat an apple a day to keep the doctor away —- eating apples are linked to a lower risk of many chronic conditions, including diabetes, heart disease, and cancer. Apples may also promote weight loss and improve gut and brain health.

Produce

  • 1 Apple, green (sliced)

  • 10 Celery stalks (sliced)

  • 1 Garlic clove (minced)

  • 1/2 cup Grapes

  • 2 Romaine lettuce, leaves (chopped)

Condiments

  • 2 Tab Lime juice

Spices

  • 1/4 tsp Pepper

  • 1/4 tsp Salt

Oils

  • 1 Tab Olive oil

Nuts

  • 1/4 cup Walnuts

Instructions

  • Prep ingredients, wash and slice celery, apples, and lettuce.

  • In a large bowl, combine all of the ingredients and toss gently to combine

  • Mix the dressing in a separate bowl and serve it over a bed of lettuce

  • Serve and Enjoy!
