Avocado & Tomatillo Goddess Dressing

This is the closest recipe I can come up with that mirrors CHOPT restaurants. This is a dressing but you can use it for roasted vegetables, salads, dips; it is so creamy you would swear it has dairy, but it does NOT. This is vegan and gluten-free. Spicy if you want it as well, you chose your adventures 1/2 jalapeno with seeds, or for a milder version, remove the seeds.

Tomatillos and Avocados are the stars of this show.

Toma what? Tomatillos are native to Mexico and although they resemble tomatoes they are not more related to gooseberries. Tomatillos have significant levels of fiber, few calories, and low fat levels. They contain moderate levels of vitamin C, vitamin A, vitamin K, and niacin, as well as potassium, manganese, and magnesium.

Avocados offer many health benefits, the major advantages are high in fiber, potassium, and folate.

8 Ingredients and under 8 minutes start to finish

  • 4 tomatillos

  • 1/2 avocado

  • 1 clove garlic (minced)

  • 1/2 jalapeño with seeds (spice is from the seeds-remove if you don’t want the heat)

  • 1/4 tsp salt

  • 2 Tab white balsamic vinegar

  • 1 Tab lime juice

  • 1 cup cilantro leaves

Instructions 

  • Remove husk from tomatillos and rinse

  • Bring a saucepan of water to a boil and add tomatillos (4-5 minutes)

  • Remove tomatillos from water, rinse with cold water, and cool

  • Using a blender or food processor add cooled tomatillos, avocado, garlic, jalapeño, salt, white balsamic vinegar, and blend until everything is incorporated and smooth

  • Add cilantro leaves and process again

    Now’s the time to taste and see what it needs more salt, maybe more spice?

  • Optional Red Pepper Flakes, or your favorite green hot sauce

Store in a sealed container and refrigerate.
