CAULI POPPERS
Entertaining is always fun and if you are hosting a party you know the importance of having foods that are a crowd-pleaser for all dietary styles. Sure, it’s easy to whip together a party for the ‘eat-everything’ group, but what about the people who can’t get everything or choose not to?
I love appetizers and if you don’t you aren’t living your best life. We have been watching a lot of football and appetizers are a must. Last game I made a batch of fresh jalapeno poppers (they are green right?), wings, and a salad for my vegan. Everyone was happy, at least everyone had something to eat. I was not, I needed to step up my game and create something game-time vegan friendly.
Challenge accepted. How do I make a delicious, healthy, vegan popper, after trying and failing on a few I came up with an alternative popper. Drum roll, please. Introducing the cauliflower popper (baked not fried).
6 Ingredients 35 minutes start to finish
1 head cauliflower (cut into same size pieces)
3/4 cup almond flour
3/4 cup vegetable stock
1/2 tsp garlic salt
1/4 tsp pepper (red, white, or black)
1 cup your favorite buffalo hot sauce (Frank, I am looking at you)
Preheat oven 350
Mix almond flour, veggie stock, garlic salt, and pepper together in a large bowl
Add cauli pieces and stir until coated
Bake on a lined or sprayed cooking sheet for 25 minutes or until brown
Coat the roasted cauli in the hot sauce and enjoy immediately.
